Skinny Alfredo Spaghetti Squash

If you know me you know I love nothing more than a big bowl of fettuccine alfredo!! Although this is one of my favorite meals, it isn’t always feasible to eat multiple days a week while trying to maintain a healthy lifestyle. This had me determined to find a new way to enjoy one of my favorite meals.

After reading a few recipes I decided to create my own. This is my version of skinny alfredo spaghetti squash! I hope you love it as much as I do.

1. Preheat your oven to 425 degrees. 

2. Cut your spaghetti squash down two both sides but not all of the way through. Now put fork holes all over the squash. Put it in the microwave on plate and cook for 5 minutes. When you take this out please use mitts because it is very hot. 

3. After microwaving your squash it should be softer and easier to cut. Trace your original lines and cut down the middle so you now have two halves. On pan lined with foil put two the halves side by side face up. Take out all of the yucky insides like you are cleaning a pumpkin. Drizzle olive oil on both halves and season with salt, pepper, garlic powder and onion powder. (These four seasonings are staples in my house!! They are added to just about everything!!!) Now flip your halves so they are face down on the foil. 

4. Place your pan in the oven and cook for 25 minutes. While the squash is cooking, I prepared frozen shrimp in a pan with butter, a scoop of minced garlic, and lemon juice. 

5. Once your timer is finished, take the pan out of the oven, gently flip the squashes right side up, and check to see if they are done. It should be a bright yellow and should be able to stick your fork in it all the way through it with ease. If not, flip your squash over and put the pan back in for 5 minutes or time as needed. 

6. Take the squash out of the oven and flip it over so it is right side up. Strike your fork on the squash to “peel” it and create “noodles”.

7. Put your squash noodles in a bowl, top with shrimp and add a pinch of salt and garlic powder for taste. I then tossed it with Classico light creamy Alfredo sauce. Enjoy!!
